同じ「肉」でも違う?東京と大阪の食文化の違い(おなじ「にく」でもちがう?とうきょうとおおさかのしょくぶんかのちがい)

日本(にほん)は一(ひと)つの国(くに)で、同(おな)じ日本語(にほんご)を使(つか)っています。ですが、すべてが同(おな)じ意味(いみ)で使(つか)われているとは限(かぎ)りません。

その代表的(だいひょうてき)な例(れい)が「肉(にく)」です。

東京(とうきょう)を中心(ちゅうしん)とした関東(かんとう)では、「肉(にく)」と言(い)うと一般的(いっぱんてき)に豚肉(ぶたにく)を指(さ)します。例(たと)えばカレーも、特(とく)に指定(してい)しなければ豚肉(ぶたにく)のカレーが出(で)てくることが多(おお)いのが普通(ふつう)です。牛肉(ぎゅうにく)を食(た)べたい場合(ばあい)は「牛肉(ぎゅうにく)」とはっきり言(い)う必要(ひつよう)があります。

一方(いっぽう)、大阪(おおさか)を中心(ちゅうしん)とした関西(かんさい)では逆(ぎゃく)です。「肉(にく)」と言(い)えば牛肉(ぎゅうにく)を意味(いみ)します。カレーも同様(どうよう)に、特(とく)に何(なに)も言(い)わなければ牛肉(ぎゅうにく)のカレーが出(で)てくるのが一般的(いっぱんてき)です。

同(おな)じ言葉(ことば)でも、地域(ちいき)によって前提(ぜんてい)が異(こと)なるのです。

さらに面白(おもしろ)いのは、同(おな)じ商品(しょうひん)でも味(あじ)が違(ちが)うことです。例(たと)えばカップ麺(めん)。同(おな)じメーカーで同(おな)じ名前(なまえ)の商品(しょうひん)でも、東京(とうきょう)ではスープの色(いろ)が濃(こ)く、味(あじ)も濃(こ)いめに作(つく)られていますが、大阪(おおさか)ではよりあっさりした味(あじ)に調整(ちょうせい)されています。

これは言葉(ことば)の違(ちが)いではなく、食文化(しょくぶんか)と歴史(れきし)の違(ちが)いです。関西(かんさい)は早(はや)くから牛肉(ぎゅうにく)文化(ぶんか)が広(ひろ)まり、関東(かんとう)では豚肉(ぶたにく)を中心(ちゅうしん)とした食文化(しょくぶんか)が発展(はってん)しました。その結果(けっか)、「当(あ)たり前(まえ)」が地域(ちいき)ごとに変(か)わっていったのです。

日本(にほん)は一見(いっけん)すると均一(きんいつ)に見(み)える国(くに)ですが、実際(じっさい)にはこうした細(こま)かな違(ちが)いが数多(かずおお)く存在(そんざい)します。

日本(にほん)を理解(りかい)するためには、言葉(ことば)そのものではなく、その背景(はいけい)にある「前提(ぜんてい)」を知(し)ることが大切(たいせつ)です。

 

Is “Meat” the Same Everywhere? Differences in Food Culture Between Tokyo and Osaka

Japan is a single country that uses the same language. However, this doesn't mean that every word is used with the exact same meaning everywhere. A representative example of this is the word “meat” (niku).

In the Kanto region, centered around Tokyo, “meat” generally refers to pork. For example, when you order curry without specifying, it is common to be served pork curry. If you want beef, you need to clearly say “beef.”

On the other hand, in the Kansai region, centered around Osaka, it’s the opposite. “Meat” usually means beef. Similarly, if you order curry without specifying, it is typically made with beef.

Even though the word is the same, the underlying assumption differs by region.

Another interesting point is that even the same product can taste different. Take instant noodles, for example. Products from the same manufacturer with the same name can have different flavors: in Tokyo, the soup tends to be darker and stronger, while in Osaka, it is often lighter and milder taste.

This is not just a difference in language, but in food culture and history. Beef culture spread earlier in Kansai, while Kanto developed a food culture centered around pork. As a result, what is considered “normal” has evolved differently in each region.

At first glance, Japan may seem like a uniform country, but in reality, there are many subtle differences like these.

To truly understand Japan, it is important not only to know the language itself, but also the assumptions behind it.
